Click on the Employee:

Click on the Profile Tab:

Edit as needed, add roles, change permissions, etc.

Email Server Host if for sending personal email from that employee. On many notification tabs there is an option to send from the company default email address or the user personal email, this needs to be configured to have personal emails available.
